Coconut with Chocolate Chip Ice Cream

This one was very good! And very easy! Not overly sweet, just the right amount of coconut flavour and nice bits of chocolate chips. Only bad thing was after I had a bowl, I forgot to put in back in the freezer and the rest all melted :(

What you'll need:
- 1 can of coconut milk
- 1/2 container or nutriwhip (or a non dairy cream substitute)
- 1/2 a 70% dark chocolate lindt bar (chop into fine pieces)


Pour your coconut milk and nutriwhip into a bar and stir to combine.

Assemble your ice cream machine (making sure you've had your freezer bowl in the freezer for AT LEAST 24hrs).

Pour your coconut/nutriwhip mixture into the ice cream machine and turn on.

Let it churn for about 20 mins, then add chocolate pieces.

Let churn for another 15 mins, scoop into a serving dish and enjoy!! Pin It
